Topping Recipes

Toppings for Just About Anything Sweet

Toppings are universal. My topping recipes cover the gamut from ice-cream to cake and then some! Some cakes just don't require a frosting or icing, but they do need something - just to give a finishing touch. Ice-cream just isn't any good in this house without a topping (or two, or three!). Even some pies are made better with a simple topping!

If you haven't guessed by looking through my Christmas cookbook, and my Christmas Sweets cookbook, I love double-duty recipes. I look very hard to find recipes that can change up into something else, without the hassle of needing an entirely new set of ingredients. Makes life simple.

Well, my topping recipes are no exception! Most of these can be made in any flavor you wish - and I whole-heartedly encourage not only new flavors, but mixing things up by adding several types of fruit, or spices to your taste.

Toppings are super fast and easy to make as a rule. One or two of these require some stove time, but you won't believe the lift they can give even the simplest dessert!

Super Easy Caramel Sauce

Apricot Syrup

Most topping recipes are very versatile. This one is no exception. Use just about any fruit puree or juice, and you've got one winner of a topping for ice-cream, cake or just about any other dessert you can think of! If you want to thicken this recipe into a sauce, add a package of sure-gel, and boil for about 2 minutes.

If you use this as a sauce, adding chopped nuts will really make it special - just finely chop up your "nuts of choice" and add them in just as soon as you remove from the heat.

As with most of the topping recipes here, this will keep for several days in the fridge. If you wish to keep it longer, you can freeze it (just remember not to fill the jar too full - leave an inch at the top).

Ingredients:

3½ cups pureed apricots
3 cups sugar
¼ cup lemon juice
1 tablespoon butter
1 package sure-gel
Glass canning jars (2 - 3)

In a large saucepan, add apricots, lemon juice, butter, and sure-gel. Bring to a hard boil for 1 to 2 minutes. Add sugar & stir bring to rolling boil on high heat & stir continuously for 2 minutes more.

Pour into hot jars & seal (just like jam).

You can use any fruit juice or puree in the same amount to make different syrups.

Blueberry Topping

Blueberry has got to be my absolute favorite of the topping recipes. I love blueberries on just about anything - even some meat dishes. This is also one of the best topping recipes to use when you've got extra fruit or juice from canning.

Ingredients:

½ cup sugar
1 teaspoon cornstarch
Dash salt
1/3 cup water
1 cup blueberries
1 teaspoon lemon juice

In a saucepan, combine the sugar, cornstarch and salt. Stir in the water until all is dissolved. Add the blueberries.

Bring to a boil, stirring occasionally, and slightly mashing the berries. Then cut down the heat and simmer until clear and thickened, stirring constantly.

Remove from heat, add lemon juice and stir until incorporated. Chill before serving.

Again, you can use just about any berry for this - and it makes a wonderful topping for ice-cream or cheesecake.

Caramel Topping

As I've stated before, caramel is one of my favorites. So - it's not hard to see why this is another of my absolute favorite topping recipes. It's fast. It's easy. And - it's CARAMEL!!

Ingredients:

½ cup dark brown sugar
1 stick butter
2 tablespoons heavy cream
½ teaspoon vanilla

Combine first 3 ingredients in a saucepan and heat until sugar dissolves. Remove from heat, add the vanilla, and stir to incorporate.

Clotted Cream

Clotted cream is easy to make, and wonderful to eat. It's one of the most famous topping recipes from Britain, and is great for topping pies, and even some cakes.

Ingredients:

1 cup heavy cream, room temperature
1/3 cup sour cream, room temperature
1 tablespoon confectioner's sugar

Whip the cream, add the sour cream and sugar, and whisk together. Beat in the mixer until mixture is very thick. Chill until serving.

Home-made Chocolate Syrup

I have to admit - I love Hershey's... But, when I run out and have a hankering for a chocolate sundae, this is one of the quickest and easiest topping recipes I have.

Ingredients:

½ cup cocoa powder
1 cup sugar
1 cup water
1 teaspoon vanilla
Dash of salt

Combine dry ingredients in a saucepan. Add the water, and heat to boiling, stirring constantly. Allow to keep boiling for 1 to 2 minutes.

Remove from the heat and cool to room temperature before adding the vanilla.

Lemon Curd

Citrus topping recipes are great. They work well for dessert, but they can be used in regular cooking and nobody will ever know. Use any citrus fruit in this recipe you wish.

Ingredients:

3 whole lemons
1¼ cups sugar
¼ pound butter
3 large eggs, beaten

Cut the rind from the lemon into strips, and set aside. Squeeze and strain the lemon juice; set aside.

In a double boiler, melt the butter. Stir in the sugar, lemon juice and lemon rind.

Continue stirring over double boiler until the sugar is dissolved, then add the eggs and stir gently as mixture thickens.

Continue cooking until it will coat the spoon. Remove from heat. Let stand a few minutes to thicken a bit more then strain through a course strainer.

Super Easy Caramel Sauce

This is one of the topping recipes that has only one ingredient, but it will take a while to cook it up. If you have the time, definitely try this - it's great!

Ingredients:

1 can sweetened condensed milk

Take the top off of the can, set in a skillet of water, and simmer at the back of the stove. Check to make sure that there is about 1 inch of water in the pan at all times, but otherwise, just leave it until it is a caramel color, and is thickened a bit. THAT'S IT!!!

It does take about 1½ to 2 hours, but if you have a spare burner, it is exceptionally wonderful.
