Filling Recipes

My Best Filling Recipes

Here is where all my best filling recipes are. You can fill the layers of a cake with just about anything imaginable. I have chosen these recipes based on ease of making them yourself.

Yes, I've used store-bought pie fillings, puddings and other items to fill cakes with, and will continue to do so. But, there are cake recipes out there that call for certain fillings... Those are the types listed here, with the simplest recipes I could come up with.

As I have said before, I believe in mix and match. That is the reason most of the fillings are listed together here, instead of with their respective main recipes.

My father used to be able to eat an entire cake in one sitting. His brother, who suffered from Down's Syndrome used to order a cake from my mother for each birthday. 40 some odd years - and he never asked for the same cake and filling twice!

With demanding sweets eaters like that in the family - we just had to come up with some interesting combinations and wonderful new flavors!

The following filling recipes are my mother's creations, born out of her desire to satisfy the most discriminating of tastes. I hope your family enjoys them as much as our's has!

Butter Cream Filling

Filling recipes like this can also be used as frostings. They are incredibly rich - especially given that I use only real butter, and never margarine. They can be flavored with just about any flavoring extract you can think of, and hold up well when nuts, chips or other items are added to them.

Butter cream is a member of the royal family of filling recipes! It is one of the most widely known, and best loved of all. It is also the simplest - bar none.

Ingredients:

4 tablespoons butter
2 cups powdered sugar
2 tablespoons milk or cream
1 teaspoon vanilla


Cream butter and sugar together in mixer until smooth and fluffy. Ad liquid and extract, and beat until mixture spreads easily.

Variations Note: You can use one teaspoon of literally any flavoring extract to vary this recipe. Don't be afraid to experiment!!

Folding in chopped nuts, mini-chips, or coconut flakes will add another dimension of flavor and "WOW!" to this most wonderful of filling recipes as well! Just remember to fold them in gently so that the filling doesn't begin to separate.

Caramel Filling

Just like the frosting, caramel is also one of my favorite filling recipes! I just can't get enough. This is a simple version that is perfect for yellow cakes, and quite good with chocolate as well.

Ingredients:

1 cup sugar
1½ cups hot milk
1/3 cup all-purpose flour
1 large egg yolk, slightly beaten
½ teaspoon vanilla


Heat milk in a double boiler. Melt half of the sugar in a heavy skillet, then add the hot milk gradually, stirring constantly. Mix the remaining sugar with flour and stir into the mixture in the skillet. Cook until the mixture begins to thicken.

Pour very slowly, stirring constantly again, onto the egg yolk. Add vanilla and stir until spreadable.

Chocolate Filling

MMM.... Creamy, rich, delicious chocolate!! There's simply nothing better in the way of filling recipes than this! It literally goes with everything, and can be used as a frosting (with the addition of a bit of powdered sugar to thicken even more) as well as a filling.

Chocolate filling recipes are a dime a dozen, but this is one of the best. I think the ultimate is this filling paired with a simple yellow cake and frosted with either a thicker version of this recipe - or fudge frosting. The combination simply cannot be beat!

Ingredients:

½ cup sugar
1 tablespoon cornstarch
2 ounces baker's unsweetened chocolate squares, grated
½ cup milk
vanilla to taste


Mix the sugar, cornstarch and chocolate then stir in the milk. Heat in a double boiler until thick, stirring constantly to avoid scorching and burning. When cool, add vanilla to taste.

Chocolate Truffle Filling

Talk about decadent - this is one of my favorite filling recipes! It goes with just about any- and everything you can think of - and yes.... If you are like me - it's great all by itself, too! As filling recipes go, its one of the easier ones, but no one will ever know it.

This filling was meant to be used with the Chocolate Truffle Cake, but its also heavenly in a just-plain-yellow cake at any time of the year. Pair it up with sliced strawberries in syrup, a chocolate ganache frosting and a little whipped cream - and you have a recipe for a cake no one at your house will ever forget!

Ingredients:

24 squares of baker's semi-sweet chocolate
2 cups heavy cream
3 tablespoons unsalted butter
3 tablespoons light corn syrup
1 teaspoon chocolate extract


Chop the chocolate squares into tiny pieces.

Place butter, cream and syrup in a sauce-pan and bring to a boil.

Remove pan from heat, pour in the extract and add the chocolate pieces, and set aside for about 5 minutes.Then, stir constantly and briskly until mixture is smooth.

Make this before preparing the cake it will fill - and store in the refrigerator. Immediately before use, whisk to lighten and add a bit of air to the filling.

Custard Filling

Custards are wonderful additions to any cake. They will lift the flavor of a cake-mix cake, and really make your home-made cakes shine! This is one of the more involved filling recipes, but it is well worth the effort.

Ingredients:

2½ cups milk
½ cup sugar
½ cup all-purpose flour
¼ teaspoon salt
2 teaspoons vanilla
1 cup butter


Heat the milk in a double boiler. Mix together the dry ingredients, and gradually stir into the warmed milk.

Return all to the boiler, and cook about 10 minutes, sritting constantly to avoid scorching.

Cool, then add vanilla. Cream the butter, and add the custard gradually to the butter. Stir until smooth.

Variations: Using half-and-half in place of the milk, and adding 2 slightly beaten eggs at the beginning creates a creamier custard filling.

Add 1 teaspoon orange zest, ¼ cup orange juice and ½ teaspoon lemon juice for citrus filling.

The zest of 2 lemons, ¼ cup lemon juice and 1 cup of sugar to replace the orange just above, and you've got a terrific, lemon custard filling!

Strawberry Cream Filling

This is one of the most versatile fruit filling recipes I have. You can use just about any fruit in it - be bold and mix and match the fruits, too!

If you would like to use this as a frosting as well, simply adding powdered sugar to the desired thickness and increasing the amount of fruit used will do the trick.

Ingredients:

1 cup heavy cream
½ cup sugar
1 large egg white, stiffly beaten
½ cup strawberries (or other fruit), mashed


Whip the cream until stiff. fold in the sugar, egg white, and mashed fruit. Yup - that's it!! Super simple, super easy and super fast - just the sort of filling recipes needed for the holiday rush!

Walnut Filling

This is the perfect filling for the Chocolate Walnut Torte on the cakes page. It is not a very involved version so far as filling recipes go, and there are dozens of substitutions that can be made for the walnuts, which make it versatile as well.

Ingredients:

2 large egg yolks, beaten
½ cup sugar
¾ cup milk
½ teaspoon vanilla - or - rum
1 pound walnut meats, chopped finely


Mix the eggs and sugar, then whisk in the milk. Cook in a double boiler, stirring constantly, until thick. Cool, add vanilla or rum and the nuts. Mix well.

Whipped Cream filling

This is one of the filling recipes that can be used just about anywhere. It is fast, easy and delicious - and it will make a wonderful addition to just about any creation! It goes well with just about any frosting, as well, so there is no need to worry about blending flavors.

Ingredients:

1 cup heavy cream
¼ cup powdered sugar
½ teaspoon vanilla


Beat cream in the mixer until it begins to thicken. Add the sugar and then vanilla. Beat until cream holds its shape when the beater is raised.

An interesting variation would be to crush some nut brittle in a blender or food processor, and add this to the frosting instead of the sugar.
